Foods to Include in a Low-carb Diet
Wouldn't it be great if we could eat anything without slowing down progress in the gym? I WISH!
As a fan of intuitive eating, I’ve been eating to maintain my current body composition for months. Not really paying that much attention to macros or being strict about counting calories. Although I wasn’t seeing big changes, I was happy with my choice. But… with the wedding creeping up on me, my goals have shifted and so has my diet. I have decided to lower my carb intake (without being too strict) and want to be more mindful about my cheat meals.
My plan is to substitute starches with low-carb alternatives like steamed veggies, mashed cauliflower and zucchini noodles. There are a ton of recipes online that look delicious but take longer than I would like to spend on cooking dinner, so here’s an easy one for you:
Easy Zucchini Noodles with Chicken (20 mins)
Ingredients:
½ box zucchini noodles*
1 chicken breast
2 tablespoons corn
2 tablespoons black beans
1 tablespoon olive oil
1 tablespoon apple vinegar
½ lime
1 teaspoon cheese (I prefer feta cheese)
½ roma tomato
Cilantro
Salt
Pepper
Instructions:
Season the chicken: with your favorite seasonings. Grill it either on a skillet or air fryer.
Combine everything in a bowl: add the zucchini noodles, chicken, black beans, tomatoes, corn, and cheese.
Make cilantro lime vinaigrette: in a blender combine cilantro, vinegar, lime juice, salt, pepper, and olive oil.
